Roomy Remedies ™ Sea Moss Cucumber Tzatziki

Ingredients:
 1 large or two medium hothouse cucumbers, unpeeled and seeded
 2 7-ounce containers full-fat Greek yogurt
 1/4 cup sour cream
 2 tablespoons freshly squeezed lemon juice (juice of one lemon)
 Lemon peel from one lemon
 1 tablespoon champagne wine vinegar
 3 tablespoons minced fresh dill
 3 medium cloves minced fresh garlic
 3 large tablespoons of Roomy Remedies Sea Moss Gel
 Kosher salt and freshly ground black pepper to taste
 Cheese cloth
Instructions:
1. Grate the cucumber by hand on a box grater using the large holes. Squeeze the cucumber with your
hands or place in a cheese cloth to remove a lot (but not all) of the liquid.
2. Place the Greek yogurt into a cheese cloth and place in the refrigerator inside of a bowl or collander
for 2 hours to strain the extra liquid.
3. In a food processor, blender, or by hand, mix the Roomy Remedies Sea Moss Gel ™, strained yogurt,
sour cream, lemon juice, lemon peel, champagne wine vinegar, dill, and garlic. Mix until smooth or
until well blended.
4. Add the drained cucumber into the blended mixture and mix until well combined.
5. Add salt and freshly ground black pepper to taste. Adjust the seasoning as needed and consider
adding more garlic and dill for a more intense flavor.
6. Serve the Roomy Remedies ™ Sea Moss Cucumber Tzatziki chilled or at room temperature as a dip
or spread with plantain chips, pita chips, veggies, or crackers.
